By having a depth of 8 meters, this wine cellar
is able to keep a constant temperature of 12-13º
C. and a relative humidity of 85%. The slow ageing
process of wines elaborated with a single grape
variety known as tempranillo, will take place
only in these specific conditions. The "
Crianza " wines will remain in American oak
casks for a period of sixteen months, and the
older wines such as " Reserva " and
" Gran Reserva", will be kept for a
24 month period.
THE SELECTION PROCESS
Starting off with a careful and selective grape
harvesting process, the grapes then underg a carbonic
fermentation process, with is traditionally performed
in La Rioja Alavesa area. Following this, the
wine´s ageing process will proceed in fine
wood casks, and eventually, it will take place
while kept in the bottle. The limited and exclusive
production makes this a fine quality wine wich
